Make-Ahead Banana Muffins
Ingredients
for 12 servings
⅓ cup (70 g) coconut oil, melted
¼ cup (55 g) maple syrup
2 eggs
¼ cup (60 mL) milk
1 teaspoon vanilla extract
3 ripe bananas, mashed
2 cups (230 g) whole wheat flour
1 teaspoon cinnamon
½ teaspoon salt
1 teaspoon baking soda
Preparation
Preheat oven to 325°F/160°C.
In a bowl, whisk the coconut oil and maple syrup until combined.
Add the eggs, milk, and vanilla extract, and whisk until combined.
Fold in the bananas, cinnamon, baking soda, salt, and flour.
Bake 20-25 minutes. Cover and store up to 2 days.
